Abstract

Methylketones represent the major fraction of volatile components in cheese and play an important role for the organoleptical qualities, particularly for blue veined cheese.

Each is checked against this paper’s own text: does it say what the citing paper says it does?

  • The action of a thiolase yields a β-ketoacid that is rapidly decarboxylated by a β-keto-acyl-decarboxylase to give a methyl ketone with one less carbon than the initial FA.

“The action of a thiolase yields a i3-ketoacid that is rapidly decarboxylated by a i3-keto-acyl-decarboxylase to give a methyl ketone with one less carbon than the initial FA (1,23,75,117).”

From Review: Compounds Involved in the Flavor of Surface Mold-Ripened Cheeses: Origins and Properties (1996) · cites this paper as [23]

Section B, “La formation de méthylcétones à partir des acides gras” (page not provided), describes β-ketoacyl-decarboxylase activity and says the resulting ketones have one fewer carbon than the original fatty acid. It identifies the preceding activity as a thiohydrolase, not a thiolase, and does not state that decarboxylation is rapid. (LLM, conf=0.85)

About these checks

Registry, retraction, Cites and statistics results are computed, not judged, with one exception: a printed reference that no index lists is read once by a model before it counts as a citation error. Claims are extracted by a model and kept only when their quote appears verbatim in the text; each cited source is then checked, with a model’s help, for whether it says what the claim relies on. Those verdicts can be wrong — read the claim’s quote and the cited source before relying on one.

Statistics and arithmetic are recomputed, not judged.

Confidence bands are shown only for fields calibrated on our annotated test set. None is calibrated yet, so no band is shown.
